Our Philosophy
At Emerge, we believe great food doesn't need to be complicated.
As a steakhouse, our cooking naturally leans towards gluten free dining built around exceptional produce, premium proteins, and seasonal vegetables. We focus on simplicity, letting quality ingredients shine and speaking for themselves on the plate.
Over time, Emerge became known as a safe and trusted place for coeliacs and gluten free diners. Our chefs are highly trained in allergen management and understand the very real risks of cross-contamination. This level of care isn't an afterthought; it's built into everything we do.
Owner Leah Gill's background in naturopathy has always influenced Emerge's thoughtful, ingredient-first approach to food, with a strong focus on how guests feel and how they dine.
At the beginning of 2024, our menu reached 95% gluten free. Later that year, the discovery of an exceptional gluten-free and dairy-free pastry gave us the final piece of the puzzle and the confidence to pursue full gluten free accreditation.
In December 2024, Emerge was proudly accredited by Coeliac Australia.
Today, our entire menu is 100% gluten free.

Does Gluten Free Change Emerge?
Not at all.
Emerge was already largely gluten-free long before becoming accredited. Our cooking has always focused on premium produce, exceptional steak, and simple, ingredient-driven dishes.
Gluten free produce has come a long way, and today there is no compromise on flavour, texture, or experience.
Emerge is just as delicious as ever. Whether you're coeliac or not, you'll feel right at home at the table.
Can We Bring a Cake to Emerge?
To protect our Coeliac Australia accreditation and ensure a truly safe dining environment, we are unable to allow any outside food into the restaurant, including cakes.
At Emerge, every ingredient and every dish meets strict gluten free standards, particularly for guests with coeliac disease or gluten sensitivities. Unfortunately, external food cannot be guaranteed to meet these requirements, and we have had to decline outside items in the past. We really appreciate your understanding and support in helping us maintain a 100% gluten free environment.
